Lecture by Mr. Mitsumori Inada, President of Inada sake brewery
A marriage of Nara’s culinary culture and sake
When Nara was the capital of Japan, many culinary cultures blossomed here. The dashi broth, in particular, is the foundation of Japanese cuisine and designated as an Intangible Cultural Heritage by the UNESCO. The head chef of Hotel Asyl presents dishes that skillfully utilize umami, the one out of the five perceivable tastes (sweet, sour, salty, bitter, and umami, also called “savory”) that was discovered in Japan. Moreover, as he combines Nara’s traditional culinary techniques, such as cooking with Chinese medicinal herbs (as described in Shuju-yakuchō (“Memorandum of Medicines”) in Todaiji Temple’s Kenbutsuchō (“Register of Beneficial Offerings”) and fermented dishes (Narazuke pickles, for example), we hope you’ll enjoy the culinary world of the inheritance of Nara’s food culture and traditional techniques with all five tastes and senses. A toast will be made with Inada sake brewery’s”Inanohana Tsukumo” (“Rice Flower White”) to start the event.
At the event, you can also enjoy 10 different kinds of “Nara sake” that we selected to match the dinner dishes.
